Left-over Turkey thru the 7th of December...
Cajun Spiced Prime Rib

1 (4 LB) PRIME Beef RIB Roast
3 tbs hot pepper sauce
2 tsp garlic powder
2 tbs Cajun seasoning blend (such as Tony Chachere's®)
1 (16 oz) package sliced mushrooms
Horseradish Sauce [see LINK on this page]
Traditional Prime Rib
1 (4 to 5 lb) PRIME Beef RIB
2 tsp salt
3 tsp ground black pepper
1 tsp garlic powder
1/2 tsp rosemary

 >> Preheat an oven to 500 degrees
 >> Place the PRIME Beef RIB Roast into a roasting pan, and rub all over the outside with the hot pepper sauce. Evenly sprinkle with garlic powder and Cajun seasoning.
 >> Roast, uncovered, in the preheated oven for 20 minutes, then reduce heat to 350 degrees and continue roasting to your desired degree of doneness, or an internal temperature of 145 degrees for medium, about 2 hours. Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 30 minutes before slicing.
 >> While the roast is resting, scrape the drippings from the roasting pan into a skillet. Place the skillet over medium heat, and stir in the sliced mushrooms. Cook and stir until the mushrooms have softened and begun to release their liquid. Serve alongside the sliced prime rib.
Serves 8
 >> Allow roast to stand at room temperature for at least 1 hour.
 >> Preheat the oven to 375 degrees. Combine the salt, pepper and garlic powder in a small cup. Place the PRIME Beef RIB Roast on a rack in a roasting pan so that the fatty side is up and the rib side is on the bottom. Rub the seasoning onto the roast.
 >> Roast for 1 hour in the oven. Turn the oven off and leave the roast inside. Do not open the door. Leave it in there for 3 hours. 30 to 40 minutes before serving, turn the oven back on at 375 degrees to reheat the roast. The internal temperature should be at least 145 degrees. Remove from the oven and let rest for 10 minutes before carving into servings.

 >> In a small bowl, combine the seasonings; rub over roast. Place roast fat side up on a rack in a shallow roasting pan. Bake, uncovered, at 350 degrees for 2 hours or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees ; medium, 160 degrees ; well-done, 170 degrees ). Remove to a warm serving platter. Let stand for 10 to15 minutes before carving.
